Breakfast: the most important meal of the day. I browned some green onions in ghee, tossed in some heirloom tomatoes (cut in half) to warm through, sprinkled with pepper and real salt, and topped with half an avocado (cubed). I added two eggs over-easy on the side. Delicious! As I was eating, I realized the real issue I will face is not feeling hungry or deprived, but fitting a healthy eating lifestyle into my crazy busy day. I don't always have this kind of time in the mornings. Or the rest of the day for that matter. I am going to have to find some ways to make this quick and easy.

Wow! Looks scrumptious-I will have to try that myself sometime. Keeping it as simple as possible today. Made Ron his blueberry pancakes today while I am at my strongest. He's getting eggs for the next three w/e's though! I also made sausages (no MSG) and made myself an omelet w/green onions, spinach, salt & pepper. I miss my cheese!!! What doesn't kill us will make us stronger though!!!
ReplyDeleteWhere did you find sausages with no sugar? I looked when I was at the store yesterday. My favorite Meijer sausage with the least offensive ingredients still has sugar. :( And I know what you mean about the cheese. That's why I didn't make an omelette. When I do make an omelette, I will probably include avocado. I think it might make me miss the cheese less.
